"Well let's put it this way, we have had stories of toffee finding its way to the back of the fridge that was there for over a year, and when it was finally found it was opened and devoured! As long as the toffee does not melt and moisture does not find its way in, its shelf life is a long time. If that happens the toffee will lose its soft snap, however, it is still edible. Either way, you can leave the toffee out on the counter but for extended shelf life, put it in the fridge or the freezer!"
